1. 雞胸肉解凍以后洗干凈。
   水中放1勺料酒，1根香蔥，5個姜片，2個八角，一把花椒粒，大火煮開。蔥可以打個結。
   水煮開后放入雞胸肉，煮三分鐘，不要撈出來，關火蓋鍋蓋燜半小時。用筷子插到雞胸肉最厚的地方，沒有血水就是煮好啦。

1. 撈出來趁熱撕成絲，順著紋路撕。撕細一點更好吃哦，花的時間也會更久。大概撕十分鐘。

1. 黃瓜削皮，用工具擦絲或者切絲。

1. 土豆削皮，用工具擦絲或者切絲，切完后要用水泡著，避免氧化。
   水里放一點鹽煮開后，放入土豆絲煮2分鐘撈出。

1. 胡蘿卜削皮，用工具擦絲或者切絲。
   水里煮完土豆以后再放胡蘿卜絲煮2分鐘撈出。

1. 水里放點油和鹽，生菜葉去除底部的梗，再放入沸水中煮30秒，變色即可，撈出瀝干水分。

1. 雞絲，胡蘿卜絲，土豆絲，黃瓜絲放在一起。

1. 調個料汁，蒜末，小米辣，2勺生抽，1勺蠔油，1勺香醋，半勺香芝麻油，1勺白熟芝麻，攪拌均勻。
   用的小白瓷勺，喝湯的小湯勺。

1. 料汁倒入雞絲中，攪拌均勻。

1. 這里就是一盆好吃的涼拌雞絲啦，可以不包生菜直接吃哦。
   配方用料比較清淡，可以按照個人口味咸淡調整料汁哦，淡了再加點生抽，喜歡吃醋的可以多加點，不能吃辣的就不用加小米辣，不喜歡吃蒜的也可以不加哦。

1. 生菜鋪平，中間放入拌好的雞絲，不要太多，生菜會包不下。可以提前把小米辣挑出來，避免吃到。

1. 上下往中間折。

1. 再把左邊往中間折一下。

1. 再繼續往右邊折一下，梗部就留在底下啦，這樣不會散開。

1. 擺盤開吃！
