準備500克面粉放入盆中,一半加入180克的開水給它燙一下另一半呢加入120克的涼水攪成面絮狀,之后下手給它揉成光滑的面團,扣上保鮮膜放到一旁醒面20分鐘。
在這期間,準備兩個西葫蘆,把它們洗干凈,擦成細細的絲兒。然后加一小勺食用鹽,抓拌均勻,趕緊腌一腌里面的水分。再準備一點提前泡好的粉絲,用刀切碎留著備用。差不多 5 分鐘,西葫蘆里的水分就腌好了,把水攥干凈之后,放進切好的粉絲、炒好的雞蛋碎、蝦皮,再加點綠蔥花。調味就加一點食用鹽、生抽、蠔油、食用油。攪拌均勻,先放一邊等著用。

接下來把醒好的面團拿出來,放到案板上,揉得表面光溜溜的。然后把面團搓成長條,分成大小差不多一樣的小劑子。接著把小劑子揉圓,按扁,搟成中間厚點兒邊上薄點兒的大圓餅。全都搟好以后,把調好的餃子餡放在餅皮中間,餃子皮的一頭往里折個小角,兩只手捏緊,然后一左一右,兩只手交叉著往中間捏緊,末尾再搓緊就行了,這樣一個蒸餃的生坯就弄好了。
再將剩下的餡料都給它攥成大一點的圓球,之后準備一碗細的玉米面,將攥好的餡,放在玉米面碗中,表面沾上一層玉米面,然后再給它拿起用手攥緊攥實,接著再去給它蘸玉米面,因為餡料里面有水的緣故,這個玉米面一攥很快就會被陰濕,以此類推,最后給它攥緊,攥到表面沒有濕玉米面即可。
全部做好以后,將它開水放入蒸鍋,蓋上蓋子蒸13分鐘。時間到后關火,直接撿出裝入盤中即可開吃。
