"滋滋啦啦"的油鍋聲里,總藏著最饞人的記憶。在灶臺(tái)前炸上滿滿一盆金燦燦的肉丸子,剛出鍋時(shí)燙的左手換右手,也要偷吃兩個(gè)。外皮酥脆到咬下去能聽見"咔嚓"聲,內(nèi)里卻鮮嫩多汁到能吸出肉湯。今天,就把炸肉丸的做法分享出來(lái),快來(lái)學(xué)習(xí)制作。
選肥瘦3:7的五花肉500克,洗凈擦干,先把肉切骰子塊冷凍半小時(shí),絞肉機(jī)攪打成肉餡。揉碎的半塊老豆腐加入肉餡,攪拌均勻。半個(gè)胡蘿卜擦絲后,用紗布擠干水分,放入肉餡中。
生姜和蔥段揉捏,泡溫水10分鐘。肉餡里打入1個(gè)冷藏雞蛋,順時(shí)針攪打200下。重點(diǎn)來(lái)了!分三次加入3大勺蔥姜水,每次都要等肉完全吸收再加。最后,撒上小半碗面包糠,抓拌均勻。
第三步:
起鍋燒寬油,中火燒到冒煙。虎口擠丸子前,在掌心抹層油防粘。丸子別搓太圓!略微橢圓,下鍋。沿著鍋邊,輕輕滾入丸子,前20秒千萬(wàn)別翻動(dòng)!等定型后,再用漏勺推散。第一遍炸到淡金色,就撈出。
第四步:
晾5分鐘,讓肉丸熱氣散盡。這時(shí),開大火,把油燒到輕微冒煙。所有丸子一起下鍋,炸30秒,顏色轉(zhuǎn)為琥珀色,立刻撈出。聽聲音就知道成功了——倒在濾網(wǎng)上的瞬間,發(fā)出沙沙的脆響。想要更酥?撒把椒鹽,趁熱顛兩下,咸香直接鉆進(jìn)裂紋里。
