我們平時吃面條的時候,多多少少都會有一點點的富余,這個油炸氣泡餅,最主要的食材就是解決了你剩面條的煩惱,正是1碗吃剩下的面條,用開水給它浸泡個20分鐘左右,這時用手一抓就特別的軟,很容易就將它抓碎,最后抓成半碎的狀態(tài)。
在里面加入20克的白糖,5克的酵母,攪拌均勻,之后分次少量的倒入面粉,因為面條里面的含水性會有所不同,而且面條還發(fā)黏,所以里邊的面粉數(shù)量不固定,大家就適量的放就可以,面粉分次少量的往里倒,邊倒邊攪,最后攪成大的面絮狀后,下手給它揉成光滑的偏軟一點的面團,最后扣上蓋子,放到溫暖的地方發(fā)酵至體積的一倍大。
大概50分鐘,這個面團體積明顯變大了一倍,里面的蜂窩組織也非常豐富,說明已經(jīng)發(fā)酵好了,將它從盆中取出,因為這個面團是偏軟的,按板上要多撒一點干面粉,然后給它揉勻排氣至原來的大小,之后給它搓成長條,分成大小均等的小劑子,每個劑子大概70克左右,之后再用兩手捏壓的手法將它捏壓揉圓。最后再給它搟成0.5厘米左右的厚度的小圓餅。
全部搟好以后扣上保鮮膜,再次醒發(fā)15分鐘,時間到后給它放入七成熱的油鍋中,每隔三四十秒給它翻一個個,這樣能讓它兩面受熱均勻,熟的更好,最后全部炸至這種完全鼓大包,而且兩面金黃,說明已經(jīng)熟好將它撿出即可。
