二、酸辣雞丁:鮮嫩多汁
雞胸肉切成小丁,放碗中,加1勺料酒、半勺生抽、少許鹽和1勺淀粉,抓勻腌制15分鐘。干辣椒6個切段、2瓣大蒜切末、1小塊生姜切絲、1根大蔥切段、2勺郫縣豆瓣醬備用。
熱鍋涼油,油熱,倒入雞丁,滑炒變色,盛出。鍋中留少許底油,放入干辣椒段、蒜末、姜絲和大蔥段,炒出香味,加入2勺郫縣豆瓣醬,炒出紅油。
倒入雞丁,翻炒均勻,加入1勺生抽、1勺香醋、半勺白糖和小半碗清水。大火煮開,轉小火燜煮5分鐘。最后開大火收汁,撒上蔥花,即可出鍋。鮮嫩的雞肉裹滿濃郁的酸辣醬汁,無論是拌飯還是拌面,都讓人欲罷不能!
