趁著醒面的時間,我們來做紅糖餡。準備一塊紅糖,加入幾粒黑芝麻和花生碎,攪拌均勻備用。這樣做出來的紅糖餡不僅不會流出來,而且味道更香。
案板上撒一些干面粉防粘,把醒好的面團取出發酵至原來的兩倍大就可以了。手上也多撒些干面粉,把面團給它按壓排氣,然后分成大小均勻的小劑子。

把每個小劑子都搓圓,用手掌輕輕按扁,放入提前備好的紅糖餡,收口朝下再次按扁,這樣生胚就做好了。
全部做好以后,放到蒸鍋上面二次醒發 10 分鐘左右,時間到開大火蒸 10 分鐘,關火后再燜 5 分鐘就可以出鍋了。
