把西蘭花大的根部去掉,切成小朵,放到淡鹽水里泡個 10 分鐘上下,這么做能把西蘭花里殘留的農藥和蟲卵有效去掉。在開水鍋里加點食用鹽和食用油,然后把泡好的西蘭花撈出來,放到鍋里焯一下水。焯水的時候加一點鹽和油,能讓這菜的顏色一直綠瑩瑩的。開鍋一分鐘后,把它撈出來,放到涼水里過一下涼,接著把水攥干凈,放到大碗里等著用。
接下來在大碗里打 4 個雞蛋,雞蛋的數量可以按家里人的多少來定。之后加一點食用鹽,讓它有點底味。再拿一個小碗,放一小勺淀粉,加一點清水,把淀粉化開,接著倒到雞蛋液里,攪拌均勻,把雞蛋攪散,讓它和淀粉完全融合在一塊兒。
攪好的雞蛋液淋在西蘭花碗里,將它攪拌均勻,之后再準備一個容器,在里面最好鋪入一張油紙或者刷入一點食用油,這樣方便蒸好以后將它脫模,之后扣上保鮮膜,表面扎幾個透氣孔,然后將它開水上鍋,三分鐘后再改小火蒸10分鐘。
利用這期間準備幾瓣大蒜,給它去掉外皮拍扁,切碎,放入小碗中,再加入一點增鮮醬油,辣椒油攪拌均勻。
