制作步驟:
1.豆沙餡分成均勻的小份,每份約15-20克,搓成小球備用;準備一小碗清水,方便粘合春卷皮。
2.取一張春卷皮,平鋪在案板上,把豆沙球放在春卷皮下方1/3處,將春卷皮底部向上折疊,蓋住豆沙球,然后將左右兩側的春卷皮向中間折疊。
3.卷好的部分向上卷,卷至還剩一點春卷皮時,用手指蘸取少量清水涂抹在春卷皮邊緣,繼續卷緊,讓春卷皮粘合,一個豆沙春卷就包好了。
4.鍋中倒入足量的食用油,燒熱,插入筷子,周圍會冒出細小氣泡。放入包好的豆沙春卷,中小火慢炸,不時翻面,讓春卷受熱均勻。
5.當春卷表面變成金黃色,變得酥脆時,撈出控油。炸好的豆沙春卷放在廚房紙上吸去多余油脂,稍微放涼后,即可享用。
