重慶的火鍋店，總是擠得水泄不通。紅油翻滾，白煙繚繞，人聲鼎沸，仿佛連空氣里都浸透了麻辣的氣息。我每每經(jīng)過，總不免駐足觀望，看那鍋中湯料沸騰，辣椒與花椒在熱油中舞蹈，便覺得舌尖發(fā)麻，喉頭癢癢。

今日終得一試。店堂狹小，桌椅緊挨，鄰座食客的汗味、煙味、火鍋蒸騰的熱氣混在一處，竟也不覺其臭，反倒生出一種親切來。老板是個粗壯漢子，臉上橫肉堆積，卻生就一副好脾氣，見我獨自前來，便笑著指了指角落的空位。

"自己涮，小心燙。"他說。

我想起兒時家中煮面的情景。母親在灶臺前忙碌，父親坐在桌旁看報，我則圍著鍋臺打轉(zhuǎn)。面條下鍋，母親用筷子輕輕攪動，待其煮熟，便撈起放入碗中，澆上事先調(diào)好的醬汁。我總是等不及冷卻，便夾起一筷子送入口中，燙得直跳腳，母親便笑著罵我"饞貓"。如今母親已故去多年，父親亦老邁不堪，那時的面條滋味，再也尋不回來了。

扯面片的師傅是個中年漢子，手臂上肌肉虬結(jié)，手掌寬大厚實。他將面團在案板上反復揉搓，繼而拉長、折疊、再拉長，如此反復數(shù)次，面片便如綢緞般光滑柔韌。只見他手腕輕抖，面片便在空中劃出優(yōu)美的弧線，落入鍋中，瞬間被沸水吞沒。

"這叫'扯面'，講究的是力道與節(jié)奏。"鄰座男子不知何時湊了過來，"我老家陜西也有這手藝，不過做法略有不同。"

我點頭稱是，心中卻想，食物本無定法，各地有各地的做法，各家有各家的滋味。正如這重慶火鍋，麻辣是其魂魄，然則麻辣之中，又可細分出千百種變化來。有人嗜辣如命，有人微辣即止；有人偏愛牛油鍋底，有人鐘情清湯。食物之妙，正在于它能包容萬千口味，卻又在包容中不失其本真。

食畢，額上已沁出細密汗珠，喉嚨卻似有一團火在燃燒。鄰座男女已然離去，只余桌上幾片殘菜，鍋中湯汁漸稀。老板過來收拾碗筷，見我意猶未盡，便又添了半勺紅油。

"下次再來。"他說。

我點頭應(yīng)允，推門而出。夜風拂面，頓覺清爽許多。回望店內(nèi)，紅光依舊，人聲依舊，火鍋店的煙火氣，便是重慶城最生動的注腳罷。
