首先咱們準備新鮮的毛芋頭一個,削去外皮后切成片,再改刀切成細絲,切好的芋頭絲放入清水中浸泡一下。
接下來我們把鍋燒熱,加入清水,水量沒過芋頭絲就行,然后開大火燒開,水開以后呢,往里面加入一勺鹽,增加底味,再倒入泡好的芋頭絲,快速的攪拌均勻,使芋頭絲受熱均勻,這樣呢,可以讓芋頭絲變得更加的爽脆。
等芋頭絲煮至斷生,表面微微透明的時候就可以撈出控水了。撈出來以后呢,一定要多攥幾下水分,因為芋頭絲含有大量的淀粉,不攥干水分的話,炸出來的芋頭條就會非常的黏稠。
攥好水分的芋頭條呢,咱們放在盤子里攤開散熱,然后再撒上一些干面粉,用筷子給它攪散,防止粘連。
下面呢,我們來炸芋頭條,鍋中呢倒油,油溫五成熱時,也就是筷子伸入油鍋能迅速冒小泡泡的時候,把芋頭條放入鍋中,用漏勺不停的翻動,讓芋頭條受熱更加均勻,等芋頭條變成金黃色就可以了,撈出來控油裝盤。
最后呢,在上面淋上提前調好的料汁,一碗外酥里糯,吃起來嘎嘎香的炸芋頭絲就做好啦!
