制作步驟:
第一步:干辣椒剪成段,用溫水浸泡20分鐘,撈出瀝干。所有干香料,花椒除外,用溫水泡10分鐘,去除灰塵和苦澀味。
第二步:牛板油切成小塊,冷水下鍋,加幾片姜和一小段蔥,大火燒開后轉小火慢熬。熬到油渣變成金黃色、體積明顯縮小時,撈出油渣,鍋里剩下的就是純正的牛油了。
第三步:保持小火,瀝干的糍粑辣椒和郫縣豆瓣醬一起,下入牛油鍋中。鍋鏟不停地慢慢攪動,炒30-40分鐘,直到鍋里的水汽完全蒸發,油色變得紅亮,辣椒也從鮮紅色變成深紅色,能聞到濃郁的醬香味和辣香味時,就差不多了。
第四步:辣椒和豆瓣醬炒好后,依次下入泡好的香料、切碎的豆豉、醪糟和冰糖,繼續小火翻炒15分鐘,讓各種味道充分融合。關火前一分鐘,撒入準備好的花椒,快速翻炒幾下,利用余溫,將花椒的麻香味激發出來,即可關火。
一鍋香氣四溢的牛油火鍋底料就這么完成了!讓它在鍋里自然冷卻,你會看到紅油和底料慢慢分層,這才是最誘人的狀態。冷卻后,可以分裝在密封盒里,放入冰箱冷藏或冷凍保存。冷藏可以放半個月,冷凍能放半年以上。
