用料
茄子 半斤
淀粉 適量
1:茄子切塊,加入多一些的鹽巴,抓勻腌制10-15分鐘 出水 擠干水分
2:用水清洗一遍, 再次擠干水分,然后加入一些淀粉,抓伴均勻
放著備用,然后準備肉沫,蒜末,也可以準備青紅辣椒(沒有也可以,我就沒有放)

3:鍋里放20克油,用大火,高溫鎖住,茄子才不變色加入青紅椒(沒有可以不放) ,炒軟后,倒出來備用

步驟2
4:鍋里放10克油,加入肉沫煸炒出油,然后加入蒜末,繼續翻炒,陸續加入調味料:料酒(或是花雕酒也可以),生抽,雞精,耗油,不要放鹽巴了,可以加一丟丟糖,把肉沫味道調好,然后加入剛才炒軟的茄子繼續翻炒
5:可以出鍋了哈哈哈,不油炸,不加水,少油 非常非常好吃的茄子
