面粉400克
開水110克
涼水110克
食用鹽兩克
食用油適量
首先,在盆中放入400克的面粉,加入兩克的食用鹽,這樣可以增加它的筋性,攪拌均勻以后,將它一分為二。在一半面粉中倒入110克的開水攪成面絮狀,另一半里面倒入100克的涼水,全部攪成面絮狀后,下手給它揉成光滑的面團。蓋上保鮮袋,醒面15分鐘。
時間到后不用揉,直接將它取出,搓成長條,接著將它切成兩指寬的面劑子,這個劑子不用太大,要根據家里的鍋來定,表面撒入一點干面粉,以防粘連,之后將它摁扁,再搟成圓餅,厚度大概有兩個一元硬幣左右的就可以,之后將它們一個一個的摞在一起,用手轉圈給它轉一轉,這樣可以保證面餅厚度和大小一致。
接著取一個盤子,在底部抹入一點食用油,然后將面餅放在上面,表面再抹一點食用油,這個油一定要保證涂抹均勻,然后再摞下一張,就這樣以此類推,最后一張不用抹油,直接蓋在上面就可以,全部做好以后蓋上保鮮袋,再次醒面20分鐘。
時間到后,將這一摞面餅取出,給它摁扁,然后從中間向兩邊搟開,搟的時候要兩面交錯著搟,這樣才能保證餅皮大小一致,這一摞可以放上五六張,七八張或者14張摞在一起都可以。
搟好以后鍋中不用抹油,直接將餅皮放在里面等,這個餅表面微微鼓包給它翻個,這樣第一張餅就已經熟透,將它揭出,然后再將它翻個,因為這個餅特別薄,翻個個,一張餅三四十秒就可以熟透。
