袋裝酸菜:1包
腌魚料:

雞蛋清:1個

大蒜:6-8瓣

制作步驟:
1.讓商家幫忙把魚基本收拾干凈,回家后把魚肚子里的黑膜徹底刮掉。然后把魚頭剁下來,魚身從中間片開,去掉中間的大骨。魚骨和魚頭別扔,剁成塊。
2.魚肉平鋪,刀斜45度角,從魚尾往魚頭方向,片成薄片。片好的魚片放入大碗中,加入1湯匙料酒、半茶匙鹽、一小撮白胡椒粉,用手輕輕抓拌均勻。
3.魚肉之中打入1個雞蛋清,繼續抓拌,感覺魚片黏糊糊的就對了。最后分兩次加入1.5湯匙紅薯淀粉,每一次都抓勻,讓每片魚都裹上薄薄的漿。抓到魚片看起來亮晶晶、摸起來滑溜溜的,腌制15分鐘。
4.袋裝酸菜拆開,用清水稍微沖洗一下,洗掉表面多余的鹽分。如果買的酸菜特別咸,可以多泡一會兒。洗好的酸菜擠干水分,切成小段。
5.泡姜1小塊切片,泡椒5-6個切成小段,大蒜一半切片一半切末,干辣椒剪成段,花椒1湯匙,大蔥1段切蔥花。
6.鍋燒熱,倒入比平時炒菜多一點的食用油。油熱轉小火,放入花椒粒和干辣椒段,慢慢煸炒出香味和紅油。加入泡姜片、泡椒段和一半的蒜片,繼續煸炒出香味。
7.倒入切好的酸菜段,轉中大火,快速翻炒2-3分鐘。酸菜炒香后,魚頭魚骨放進去,稍微煎一下,兩面金黃。然后,倒入足量的開水,大火燒開。湯燒開后,轉中小火,蓋上鍋蓋煮5-8分鐘,讓魚骨和酸菜的味道充分融入湯中。
8.開蓋,嘗一下湯的味道,再酌情加入適量鹽。加入1茶匙白糖提鮮,中和一下酸辣味,再加少許雞精。湯底調好味后,用漏勺把鍋里的酸菜、魚骨等料撈出來,酸菜鋪在準備好的大湯碗底部。
9.鍋里的湯保持微微沸騰的狀態,腌好的魚片一片一片地快速下入鍋中,用筷子輕輕撥散,防止粘連。所有魚片下鍋后,煮2分鐘,看到魚片變白、微微卷曲就熟了。
10.魚片煮好后,連湯帶魚片迅速倒入鋪好底料的大碗中。在魚片表面均勻撒上蒜末、蔥花、干辣椒,滾燙的熱油‘刺啦’一聲,均勻地潑在調料上。最后撒上一把香菜段,一道色香味俱全、魚片嫩滑、湯汁酸爽的酸菜魚就大功告成啦!
