制作步驟:
1.排骨浸泡2小時,換水3次,泡干凈血水,洗干凈。排骨冷水下鍋,加入1勺料酒、幾片姜片,大火煮開。水開后,將血沫撇干凈。焯水5分鐘后,撈出排骨,用溫水沖洗干凈,瀝干水分。
2.鍋中倒入少許食用油,油熱后,放入瀝干水分的排骨,小火慢煎。不斷翻面,讓排骨受熱均勻,煎至表面金黃,鎖住肉汁。煎好的排骨盛出,備用。
3.在碗中依次加入2勺料酒、3勺生抽、4勺香醋、5勺白糖、小半勺鹽,攪拌均勻,酸甜可口的醬汁就調配好了。再準備一大勺淀粉,加入2大勺清水,調成水淀粉。
4.鍋中留少許底油,放入蔥姜蒜末,爆香。倒入煎好的排骨,翻炒幾下。接著倒入調配好的醬汁,炒勻,讓每一塊排骨都裹滿醬汁。加入適量清水,沒過排骨,大火煮開后,轉小火燉煮15-20分鐘.
5.排骨充分吸收醬汁的味道,開蓋,倒入水淀粉勾芡,湯汁變得濃稠。大火收汁,撒上少許白芝麻,翻炒均勻,即可出鍋裝盤。
