面糊的量要根據鍋的大小和個人喜好來調整,一般倒入面糊后能鋪滿鍋底,厚度在3 - 5毫米左右為宜。倒入面糊后,迅速輕輕轉動鍋,讓面糊均勻地分布在鍋底,形成一個圓形的餅坯。如果面糊有些不均勻,可以用勺子稍微整理一下。保持小火,烙制50秒左右,直到餅的表面開始凝固,在上面打人一個雞蛋,將它攤平,雞蛋的加入不僅能增加營養,還能讓餅更加松軟,邊緣微微翹起,底面呈現出金黃色。這時,用鏟子小心地將餅翻面,注意不要把餅弄破。翻面后在表面抹上一點蒜蓉辣椒,或者放入自己喜歡吃的其它醬料,直到另一面也變成金黃色。當兩面都煎好后,將蔥花餅取出,放在盤子上,就可以食用了。
