自制街頭小吃豌豆黃超簡單的做法
- 脫皮豌豆500克淘洗三五遍,涼水浸泡4-6小時(shí)(時(shí)間太久容易發(fā)芽)
- 普通鍋(高壓鍋也可以)里倒入2000克清水,倒入泡好又淘洗了兩遍的豌豆,煮30分鐘,水開后可以半開著鍋蓋,防止撲鍋
- 煮熟的豌豆,撈出來放到破壁機(jī)里,打碎成泥,越細(xì)膩越好(如果你的破壁機(jī)帶不動(dòng),里面加一點(diǎn)水)。打成泥,轉(zhuǎn)移到不粘鍋里
- 加入白糖150克、切碎的紅棗50克、洗凈的葡萄干30克
- 開小火用硅膠鏟不斷翻炒
- 炒到粘稠不流動(dòng)狀態(tài),關(guān)火,別炒太干,不然表面會(huì)開裂

- 把豌豆泥轉(zhuǎn)移到無水無油干凈的容器中,底部無須抹油,表面抹平,蓋上蓋子或者保鮮膜,冷藏4小時(shí)
- 輕松倒扣脫模
- 口感細(xì)膩,入口即化,切塊食用,橫截面很整齊漂亮
- 注意冷藏保存,盡量兩天內(nèi)吃完
