山西的面食，向來是極好的。刀削面、栲栳栳、臊子面，名目繁多，不勝枚舉。我雖不是山西人，卻也嘗過幾回，每每想起，便覺得舌尖上泛起一陣酸香。

刀削面最為奇特。那面師傅手持一塊面團(tuán)，另一手執(zhí)刀，刀光一閃，面片便如飛雪般飄入沸水之中。面片厚薄不均，邊緣微卷，倒像是被風(fēng)吹皺的湖面。煮熟撈出，澆上臊子，那臊子是用豬肉末炒制，佐以蔥姜蒜末，再淋上老陳醋，酸香撲鼻。食客們往往等不及面涼，便呼嚕呼嚕地吸溜起來，額頭上沁出細(xì)密的汗珠，卻仍不肯停箸。

臊子面的醋香尤為特別。山西人嗜醋，醋于他們，猶如鹽于海邊人，不可或缺。那醋不是市井間常見的白醋，而是陳年老醋，色澤深沉，酸中帶甜，回味悠長(zhǎng)。澆在面上，醋香便如游絲般纏繞在舌尖，久久不散。我曾見過一位老者，吃面時(shí)必先啜一口醋，瞇起眼睛，仿佛在品味什么瓊漿玉液。

而今城市日新月異，那些老面攤漸漸少了。取而代之的是窗明幾凈的面館，菜單上印著精美的圖片，價(jià)格卻翻了幾番。味道雖也不差，卻總覺得少了些什么?；蛟S是少了那蹲在路邊吃面的暢快，少了那醋香與汗臭混雜的人間煙火氣。

面食終究是面食，填飽肚子而已。但那些在面攤前消磨的時(shí)光，那些與陌生人共食的短暫緣分，那些隨著熱氣蒸騰而去的閑言碎語(yǔ)，卻比面本身更令人回味。

人生百味，不過一碗面的工夫。
