廣西的老友粉，是極好的。酸辣之味，豆豉酸筍之香，炒肉之鮮，煮粉之滑，皆在其中。每每食之，便覺舌尖上跳著一出戲，酸、辣、鮮、香，輪番上陣，竟至于使人忘卻了身外之事。

我初嘗老友粉，是在南寧的一條小巷里。那店極小，僅容得下三四張木桌，壁上油漬斑駁，桌椅亦不甚齊整。店主是個瘦長的老人，臉上皺紋如刀刻，眼睛卻極亮，手里持一柄鐵勺，在沸湯中翻攪，動作極是嫻熟。我點了一碗老友粉，他只點了點頭，便不再言語，自顧自地忙活去了。

少頃，粉端上桌來。但見碗中粉條雪白，浮著些豆豉、酸筍、肉末，湯色金黃，上面漂著幾星紅油。我舀了一勺湯嘗了嘗，先是微微的酸，繼而辣意便從舌尖蔓延開來，繼而豆豉的咸香、肉末的鮮美，諸般滋味在口中交融，竟至于使人微微出汗。我不由得連吃了幾口，額頭竟滲出細汗來，而食欲卻愈發的旺了。

有一回，我見店主炒肉，手法極是獨特。他將肉切成薄片，先用熱油爆炒，繼而加入豆豉、蒜末，快速翻炒，最后撒上一把蔥花。那肉片在鍋中翻飛，轉眼間便由紅轉褐，香氣四溢。店主將炒好的肉盛出，又另起一鍋煮粉，待粉將熟時，將肉蓋在粉上，再澆上一勺熱湯。這一系列動作，快而不亂，顯是練了多年的功夫。

我想，這老友粉之所以好吃，大約便在于這看似簡單實則極講究的做法。豆豉要選上好的，酸筍要腌得恰到好處，肉要新鮮，粉要筋道，湯要鮮美，缺一不可。而將這些看似平常的食材組合在一起，便能產生奇妙的化學反應，成就一碗令人難忘的老友粉。

后來我離了南寧，到別處謀生，便很少有機會吃到正宗的老友粉了。偶爾回去，總要特意尋到那家小店，吃上一碗。店主已更老了，背更駝了，手上的動作卻依然利落。他見我來了，照例點點頭，然后開始煮粉。我坐在老位置上，看著他將一勺勺調料加入鍋中，忽然覺得，這老友粉里煮的，何嘗不是歲月呢？

一碗老友粉，酸辣鮮香，看似簡單，卻包含了廣西人對食物的理解與智慧。它不只是一種食物，更是一種記憶，一種鄉愁，一種生活的滋味。
