冬瓜:500克
豬肉餡:300克
輔料:
小蔥:2根
生姜:一小塊
雞蛋:1個
玉米淀粉:1大勺
香菜:2根
調料:
鹽:適量
生抽:1勺
料酒:1勺
白胡椒粉:少許
香油:幾滴
制作步驟:
1.豬肉餡放入一個稍大點的碗中,加入姜末、1勺料酒、1勺生抽、少許鹽和一點點白胡椒粉。打入一個雞蛋清,然后加入1大勺玉米淀粉。
2.用筷子順著一個方向使勁攪拌,一定要攪到肉餡起膠、感覺有粘性、抱團上勁了才行。感覺肉餡變得黏糊糊、很有彈性的樣子就對了。
3.肉餡里中途分兩三次加入蔥姜水,讓肉餡更水嫩。攪拌好的肉餡抓起來,往碗里摔打幾次。蓋上保鮮膜,放冰箱冷藏腌制15-20分鐘,讓它更入味。
4.冬瓜去皮、去瓤,然后清洗干凈,切成厚度均勻的片狀。小蔥的蔥白部分切成段,蔥綠部分切成蔥花,備用。
5.鍋中加入足量的清水,放入幾片姜和蔥白段,大火燒開。水燒開后轉中小火,保持水微微沸騰,不要翻滾得太厲害。
6.取出腌制好的肉餡,用手的虎口擠出一個個大小均勻的肉丸,直接下入鍋中。丸子下鍋后先不要攪動,等它們慢慢定型,浮起來就差不多熟了。
7.等所有丸子都下鍋,并且浮起來后,就可以下入切好的冬瓜塊了。蓋上鍋蓋,繼續用中小火煮大約10-15分鐘,直到冬瓜變得透明、軟爛。
8.嘗一下湯的味道,根據個人口味加入適量的鹽調味。出鍋前,撒上蔥花和香菜末,再滴上幾滴香油提香,就可以關火啦!
