上海還在隔離期間,摸瞎子跟團買了5斤大排,質量真心不咋的,歪瓜裂棗的,完全不是之前菜場賣的漂漂亮亮的大排。沒關系,我們化腐朽為神奇,照樣能做出漂漂亮亮,不柴鮮嫩的大排。

- 這就是團購摸瞎子買的歪瓜裂棗大排,我只好去掉骨頭,去掉肥膘,心里默念,奸商??!太惡劣了!
- 修整好的大排,小小一塊。
- 拿出敲肉錘,正反兩面使勁敲,敲大到1.5-2倍
- 大排全部敲過后,開始腌制,蛋清1個,料酒1勺,生抽1勺,鹽1克,手抓勻,保證每塊大排的兩面都吸收到蛋清。
- 吸收了蛋清的大排表面滑滑的,不似之前干干的,加蓋腌制30分鐘到1小時。
- 干凈的盤子里面倒點玉米淀粉,大排一塊一塊,兩面在盤子里面粘上粉。
注意:粉量不要貪多,照片里面這樣就可以了。如果一不小心粉多了,拎起來,兩面用手輕輕拍打,讓多余的粉掉下來。這樣做的原因是因為后續加熱水煮的時候,粉殼太厚,吸水太多,后整個脫落,影響口感。這就跟化妝一樣,粉底越厚,越容易脫妝哦。
- 熱鍋熱油,兩面稍微煎一下,定個形,不用煎到兩面金黃啊,就是斷生的意思,煎久了,肉容易老。
- 顏色跟壓在左下角的差不多就行哈,上面這塊是第一塊,油多,大,變金黃了,秘訣都告訴你們啦,快速變金黃就得火大,油多,但紅燒大排不追求金黃啊。
- 熱鍋下底油,煸炒生姜片。
- 加老抽2勺,生抽1勺,料酒1勺。
- 下排骨,給他們上色,去肉腥味。
- 排骨上完色,加熱水!熱水!熱水! 水量如圖,跟排骨齊平,加蓋中火燜煮。
- 水開后,開蓋,加糖3勺,稍作翻拌,繼續加蓋中火燜煮,大概10-15分鐘左右。
- 水量已收到自己想要預留的量,放蔥1把,加蓋再煮個2分鐘,關火。現在疫情隔離期,蔥寶寶太珍貴了,不然我得放半斤,我就愛吃蔥?? 。
