我們將半只新鮮鴨子處理干凈,鴨肉剁成麻將塊大小,放入清水中浸泡半小時,泡出血水后瀝干。鍋中加冷水,放入鴨肉、3片姜片和1瓷勺料酒,大火煮至沸騰后撇去浮沫,撈出鴨肉用溫水沖洗干凈。

炒好的鴨肉轉(zhuǎn)入砂鍋,倒入一整罐啤酒,加1瓷勺蠔油提鮮,大火煮開后,轉(zhuǎn)小火加蓋燜40分鐘。期間翻動一次,防止粘底。青紅椒各1個,切塊用筷子戳鴨肉,能輕松穿透。開蓋,轉(zhuǎn)大火收汁。
第四步:
待湯汁濃稠時,放入青紅椒塊,快速翻炒,淋半瓷勺香醋,瞬間激發(fā)出復(fù)合香氣。此時根據(jù)口味補少許鹽,撒一把蔥花增色,湯汁收到微微掛勺的狀態(tài),即可關(guān)火。撒上白芝麻和香菜碎,裝盤!
