豬蹄湯、香辣豬蹄~一蹄兩吃的方法的做法
- 超市買來的新鮮豬蹄,洗干凈,去掉豬毛,用冷水泡半個小時撈出,瀝干水份備用。
- 鍋內放入冷水,將洗好的豬蹄冷水下鍋,中火燒開。
- 水開后用勺子撇去浮沫,關小火繼續煮,中途再次撇浮沫兩次。
- 沒有浮沫后放入兩片姜片和蔥段去腥,將泡發的黃豆也一同加入到鍋中。鍋蓋半掩,如果中途水位下降過多,可以加些開水繼續熬,大概兩個小時左右湯會變濃呈乳白色,豬蹄已經軟爛,這樣湯就熬好了。
- 豬蹄湯熬好后,另起鍋過熱倒入適量的食用油。
- 放入蔥姜蒜炒香,放入兩勺郫縣豆瓣醬。
- 將郫縣豆瓣醬炒出紅油。
- 在炒好的紅油中放入從豬蹄湯中撈起的豬蹄。
- 加入適量開水、料酒、老抽、生抽、八角、香葉、花椒、冰糖、鹽,中大火燉6分鐘后給豬蹄翻面讓豬蹄的每一面都接觸到湯汁,再燉6分鐘,大火收汁,注意中途要翻翻豬蹄以免粘鍋。

小貼士
1、豬蹄在熬湯過程中已經很軟爛了,所以做香辣豬蹄時候時間不能太長;由于豬蹄已經軟爛也不用切開所以很省事的。
2、在做香辣豬蹄時候一定要勤翻豬蹄以免粘鍋。
