首先準備300克的豬肉餡,首先餃子要想好吃,調餡是非常關鍵的,將提前泡好的100毫升的花椒大料水,分次少量的倒在豬肉餡里,每次加入后都要充分攪拌,讓肉餡將花椒水完全吸收,直到肉餡變得濕潤、飽滿,接下來就是依次加入蠔油,生抽,少許的老抽上色,再加鹽,糖,味精,之后再放入蔥花,姜末,還有食用油繼續攪拌均勻,拌好的肉餡放到冰箱冷藏備用。

餡料調好以后,將醒好的面團取出,揉至表面光滑,給它搓成長條,分成大小均等的小劑子,表面撒一點干面粉,將它揉圓,按扁,搟成圓圓的餃子皮兒,取一張餃子皮放在手心,放入適量的槐花肉餡,將餃子皮對折,先捏緊中間部分,然后從中間向兩邊依次捏出褶皺,將餃子邊緣捏緊,防止煮制時漏餡。
全部包好以后,在開水鍋中加入一點食用鹽,將餃子放入里面,輕輕攪動一下,開鍋以后淋入一點清水,再次開鍋煮兩分鐘,餃子完全浮起說明已經煮熟,將它撈出控凈水分裝入盤中即可。
