山西的面，向來是極好的。刀削面尤甚，白如雪，薄如紙，入口外滑內(nèi)筋，軟而不粘，越嚼越覺滋味悠長。每每想起那飛雪似的面條從師傅手中飛出，落入沸鍋，便覺得人生在世，能得一碗好面，亦是幸事。

我初識刀削面，是在太原一家不起眼的小店。店主是個五十來歲的漢子，臉上皺紋如刀刻，手卻極穩(wěn)。他站在鍋前，左手托面，右手持刀，刀光一閃，面條便如柳葉般飄入鍋中。那動作之快，竟像是面自己在飛，而非刀削。我看得呆了，待回過神來，一碗熱氣騰騰的刀削面已擺在面前。

面湯清亮，面條根根分明，上面澆著一層臊子。那臊子是用豬肉丁、土豆丁和胡蘿卜丁炒制的，鮮香撲鼻，再淋上一勺老陳醋，酸香繞舌，直教人食欲大開。我舀起一筷子面，吹了吹熱氣，送入口中，先是面條的筋道，繼而臊子的鮮香，最后是醋的酸爽，三層滋味在口中交織，竟有種說不出的滿足感。

暮色漸濃，我起身離去。回望那家面店和鹵味店，燈光溫暖，人影綽綽。山西的面，山西的雞，不過是尋常食物，卻因著匠人的手藝和食客的用心，成了記憶里的美味。人生在世，能為一碗面駐足，為一只雞停留，或許就是最真實(shí)的幸福。
