麻辣豬蹄的做法
- 將豬蹄砍成小塊(買的時(shí)候讓老板幫忙砍好),用清水浸泡半小時(shí)泡出血水,冷水下鍋加蔥姜、料酒焯水5分鐘左右
- 將姜切片,大蒜拍碎,辣椒剪段備用
- 鍋中放油,先下入大蒜姜片炒香后,接著放入準(zhǔn)備好的香料(干辣椒、香葉、花椒、桂皮、茴香、辣椒粉、八角)放入鍋中爆香,接下來放入豆瓣醬和黃豆醬炒兩分鐘左右
- 將豬蹄倒入鍋中翻炒均勻

- 加入沒過豬蹄的熱水后,鍋中放入適量老抽、耗油、白糖后燉煮一至兩個(gè)小時(shí)
