食材很簡(jiǎn)單:羊腿肉、洋蔥、孜然粉、鹽巴、辣椒面、香菜。先準(zhǔn)備一個(gè)大鍋,水燒開(kāi)后把切好的羊肉放進(jìn)去焯一下去腥味,再撈出來(lái)過(guò)一遍涼水。
然后在鍋里放入油,等油溫上來(lái)以后放入蔥姜蒜爆香,接著放入一整個(gè)洋蔥,炒出香味后再加入羊肉翻炒幾下。這個(gè)時(shí)候就可以加水了,水量沒(méi)過(guò)肉就可以了,大火燒開(kāi)以后撇去浮沫,再轉(zhuǎn)小火慢燉一個(gè)小時(shí)左右。
一個(gè)小時(shí)后,我們開(kāi)始調(diào)味,撒上孜然粉、辣椒面和鹽巴,繼續(xù)小火慢燉半個(gè)小時(shí),期間要不停的攪拌,讓味道更加均勻入味。
半小時(shí)后,出鍋前撒上香菜碎,這樣一道鮮嫩多汁、原汁原味的手抓羊肉就做好了。
你別看這道菜簡(jiǎn)單,但是它可是有著 2000 年的歷史呢!相傳當(dāng)年秦始皇修筑長(zhǎng)城時(shí),在這里駐扎了大量的士兵,他們從老家?guī)?lái)了烤羊肉的技術(shù),久而久之就演變出了現(xiàn)在的手抓羊肉。
