辣雞爪的做法
- 雞爪展開,去指甲
- 放生姜,料酒(或者白酒)焯水
- 煮開后煮三分鐘,撈出洗凈浮沫
- 重新加水
- 加入桂皮,八角,香葉,干辣椒,姜片(去腥增香)
- 加入生抽,老抽,冰糖,鹵一下
- 煮20分鐘,或者高壓鍋壓3-4分鐘
- 撈出雞爪
- 保留原湯汁
- 油爆干辣椒,大蒜,加一點辣椒面
